Replace the blue and black temp sensors. They don’t cost much and will be the first thing you should try. If you still have issues after that there are a few other things you can try but you need to eliminate the potential of a temp sensor issue first. That’s how I would approach it anyway.

You really need to check the ignition timing is correct too. Look for the famous Rubjonnys guide to setting up your Digifant.

certainly wont be your blue temp sender and aftermarket ones can cause trouble

Very rare on a mk2, if it has one it's going to be on the front section of the exhaust.

Stuttering under load | Club GTI - another 8V not behaving plus mine...

I think Tristan is on the money re: o2 sensor, to the best of knowledge the Mk2's didn't have them or at least any of the 3 I had didn't have them.

They only have it if it has a Catalytic converter.

also went to pull the air box today to look around and noticed there is fuel in the intake boot and the air filter has a gas smell (i have never replaced any of that go the car a week ago) would that be from it running poor at temp ? or could that help indicate an issue??

Would suggest it's running really rich.

Unless you have absolute proof of a proper Service being undertaken-I would start with all of that coupled with checking the mixture as Tristan said above.

At a minimum check/replace the following:
    Distributor Cap
    Rotor Arm
    Spark Plugs
    Fuel filter
    Air filter

If there is a stink of fuel around the air filter then the car needs a good tune-up in conjunction with the above

for sure we found a o2 sensor and unpluged it seemed to make it run the same if not slightly better ?? (i live in the us if that answers anything with the having a cat and 02 and the car is a 1990 so that would mean digifant2??? but we did find that the reason its starts better in the morning is that it has all night to drain the fuel that is in it into the airbox and drain out? so now is more of a question of "why is my car running so rich?????"

Check the ecu plug for corrosion, does the plastic cover of the Digifant unit look like it has been opened, is your fuel pressure regulator working ok, is your fuel return line free from blockage, are the injectors original or upgraded, has the car any modifications, such as a "chip" in the ecu...
