Im looking for a 3" exhaust system for the mk2 golf but cant seem to find anyone that makes one. Can someone point me in the right direction or do I need to make a custom one?

It's a franchise business, so shop around for a local-ish franchise that has a good rep. You need to be around 250 bhp or more to need something that big though. If you go for too big an exhaust you'll lose power.
So wont be so good with 1.8 gti , ive got cam and the new ripspeed airfilter though. Was thinking about one of those supercharger electrics aswell?
Bin the air filter, put the cam in the fuel tank (increases the fuel flow), and put the electric supercharger right on the end of the tailpipe - that way it'll suck out exhaust gases instead of trying to force them in.
