Not happy with the oil temps on my VR6 - have flushed the oil and replaced - twice - with good oil. Yes should have all you need, I bought mine from them, they were a good price back then too, even better that they were local so i could pick it up and save on the postage.
You need an adaptor bolt on the VR6 that allows the original heat exchanger and the sandwich plate from the oil cooler kit to be fitted together. A friend had a few made up when I did mine, you may be able to get one from Stealth racing. I seem to remember needing the cap with the hexagon from an early VR6 engine as the later 95> VR6 has a plastic cap that's part of the sleeve that goes through the heat exchanger. EDIT - That'll teach me to read the eBay listing before commenting. That kit does away with the stock heat exchanger, but does require an additional cap if used on later engines.
Yes, however, the thermostat is never fully closed anyway,as oil flows through the cooler all the time.
That end cap was under a tenner from think auto. Try a new sender in the housing whilst you are down there. GSF stock them (although not listed on there site) have to give them the VAG part number
