Without stating the obvious, make it bigger :)

Overbore it by 2mm, and fit 84.5mm diameter pistons.
    Just like that.

Or simply overbore by 1.0 and fit a 1.9 diesel crankshaft.

By fitting a dieselcrank stroke go from 92,8 mm to 95.5 mm
So the piston comes 1.35 mm higher above the bloc deck , this means that you need other pistons with the correct height to compensate it

I was being slightly cheeky tbh Hugo. By saying "just" or "simply", it was so that the original poster could hopefully see it was anything but simple, or cheap!

Having the pistons 1.35mm higher could be construed as an advantage, as it can be more expensive trying to get the compression up than down.
I have recently been there, with 2mm off the top of a tall block costing me an arm and a leg, while I can modify pistons at home on my fairly modest lathe.
Important thing is measure measure measure

I didn’t know weather there was a different crank/pistons that would fit the 2.0 block before you start making it bigger/boring it out.

No, no simple or cheap method. And there would be flip all extra grunt in a 2.1 over a 2.0.

As Tristan says above, no real world difference going to 2.1 when a 2ltr tugs along quite nicely, unless you just really fancy one...nothing wrong with that.
STD 2ltr 82.5mm bore and diesel crank will give 2042cc, 83mm bore will make 2067cc, 83.5 bore will give 2092cc, but bores getting thin and piston availability even thinner.

Custom pistons are an option but not cheap.
