What is the offset of alloy I would need to get for my Mk2 1.6 Carb Driver?

Tempted to get new 15's or get my current ones refurbed.

Also if I wanted to lower around 60mm other than the springs what else needs replaced?

et 30 is usually pretty safe.you can use a lower et but they will be closer to the arches if ou lower it.

get uprated shocks at the same time as the springs.shortened bump stops and new top mounts if yours are shot.

porsche wheels will work too.porsche usually have an et of about 52 so 25mm adadptors will bring that down to a golf safe et27
