    Engine Issues-help needed!

We recently started having lunpy tick over issues at first with our 2.0ltr TDI '14 plate T5 a month ago, so we took it in to be looked at. Our local garage found no codes to work from at first, but later found the fuel rail pressure sensor to be at fault. After this was changed, the engine tick over wasn't right after start up, but sorted itself down the road. When making the trip back to home from the garage, I accelerated from the roundabout, onto a 50mph section. Accelerating past 2000rpm, immediately went into a limp, and started knocking, which sounded like over fuelling.
I took it back to the garage, and after a couple of days, guy rings me to say there's an issue still, and he can't seem to sort it. Sure enough, after about 45 mins driving, it floods and fails. Even with ignition off and on, and time stood still to let fuel drain down, she's still the same.
We rang round and finally got it booked in to a diesel specialist. He's worked his way through every sensor and not found a problem with pump regulator, sensors or owt.
His original call back asked if the van had been remapped, presumably after when it was converted to a camper. We have no knowledge of this, as the previous owner didn't mention to my partner when she bought it.
Has anyone had a similar issue? If so, what was the cure?
    Many thanks in advance.
